NHS Scotland Food Safety Assurance Manual has been written for use as a guidance document, giving an understanding of a Hazard Analysis and Critical Control Points (HACCP) based system. As previously indicated NHS Boards may be required to undertake local risk assessments to develop local based procedures if unable to implement the requirements of this manual.
